A healthier 2008!

So what have I been doing all afternoon? What else but pureeing vegetables! I got this cookbook for Christmas and I have been dying to try it out. So today I pulled it out and started purying. If you haven't heard of this cookbook the whole idea of it is to puree vegetables and add them into foods. So you get a healthier meal while the vegetable is disguised by the food.
I did sweet potatoes, spinach, brocolli, cauliflower, and carrots.
After spending the afternoon pureeing the vegetables I decided to try out one of the recipes in the book, so after looking through it I had all the ingredients for the baked spaghetti pie. First you take ground turkey (or ground beef) and mix it with brocolli puree, parmesan cheese, and garlic. Then you make them into little meatballs. Then you mix cooked spaghetti, cottage cheese, tomato sauce, and carrot puree. Then you put it all in the pie dish and add cheese on the top and bake it. So it was a really easy recipe and I got to use alot of leftovers we had (we had spaghetti the other night and I used the leftovers). I was a little nervous, and while it was baking Luke kept looking in the cupboard for a backup plan. So when it was finally done we were very pleasantly surprised! It was actually pretty good. Luke said he really liked it and Jack ate a ton of it! So it was a successful dinner! The brocolli puree in the meatballs was still noticeble but it was still good. I used ground turkey because it was all I had, but I think ground beef would hide the brocolli taste a little more if you don't like brocolli. So I think I am a fan of the cookbook and I have tons of puree now to use! We all like vegetables here so I am not to worried about hiding the vegetables but it is just an extra way to get more throughout the day!
After dinner I tried the chocolate chip cookie recipe. It has chickpeas in it and it made me an even bigger fan of the book! They were so so good! The chickpeas totally disappeared when the cookies baked and you would never guess they were in them! It was nice to know that while I was eating a cookie I was also getting some protein and fiber! (warning: the food in this book still has a "healthy" taste to it, it is not like eating regular fatty foods) But if you are looking for a way to make your 2008 healthier I would totally recommend buying it!

I have been debating about weather or not to buy this book ever since I heard about it. I'm so glad to hear someone I know talk about it...and that you liked it. It seems pretty cool and I like the concept of it. It's cool that it's Jerry Seinfield's wife who wrote it. :)

I think I'll get this now.

I got this book for Christmas too, but I haven't taken the plunge and tried any recipes. I'm worried about all the pureeing, etc. But now that I hear the recipes were a success for you I am definitely going to try it out. Was it all that hard to puree the veggies??

Robyn & Melissa-
It wasn't hard to puree the veggies it just took some time because I did like 5 veggies in one day. You just have to chop them and then stem them and then throw them in the food processor. So because I had so many I had to wash everything inbetween different vegetable. I kept out a couple bags of each and put them in the fridge and then frove the rest! I made quite a few so hopefully I will be stocked for awhile.

Tiff-
my mom called me and was laughing so hard about your comment! You are funny, but honestly it is not that bad. We are sitting here eating the leftover spaghetti for lunch and Luke just said that it was like restaurant type good, he really really likes it! So you know Luke and so maybe you will trust him :) I have a friend that tried the brownies and wan't a fan so I am not sure about all the recipes but the 2 I made were good. I think it is easier to hide vegetables like carrots and cauliflower than the green veggies! I am glad that I informed you about the new "in" thing though :)

I have heard about this book, I think I heard she was getting sued because someone claimed she copied her idea. Anyhow, it sounds...interesting! Anything that takes a ton of work, I don't like to do...but maybe I will try it out!
