A healthier 2008!
So what have I been doing all afternoon? What else but pureeing vegetables! I got this cookbook for Christmas and I have been dying to try it out. So today I pulled it out and started purying. If you haven't heard of this cookbook the whole idea of it is to puree vegetables and add them into foods. So you get a healthier meal while the vegetable is disguised by the food.
I did sweet potatoes, spinach, brocolli, cauliflower, and carrots.
After spending the afternoon pureeing the vegetables I decided to try out one of the recipes in the book, so after looking through it I had all the ingredients for the baked spaghetti pie. First you take ground turkey (or ground beef) and mix it with brocolli puree, parmesan cheese, and garlic. Then you make them into little meatballs. Then you mix cooked spaghetti, cottage cheese, tomato sauce, and carrot puree. Then you put it all in the pie dish and add cheese on the top and bake it. So it was a really easy recipe and I got to use alot of leftovers we had (we had spaghetti the other night and I used the leftovers). I was a little nervous, and while it was baking Luke kept looking in the cupboard for a backup plan. So when it was finally done we were very pleasantly surprised! It was actually pretty good. Luke said he really liked it and Jack ate a ton of it! So it was a successful dinner! The brocolli puree in the meatballs was still noticeble but it was still good. I used ground turkey because it was all I had, but I think ground beef would hide the brocolli taste a little more if you don't like brocolli. So I think I am a fan of the cookbook and I have tons of puree now to use! We all like vegetables here so I am not to worried about hiding the vegetables but it is just an extra way to get more throughout the day!
After dinner I tried the chocolate chip cookie recipe. It has chickpeas in it and it made me an even bigger fan of the book! They were so so good! The chickpeas totally disappeared when the cookies baked and you would never guess they were in them! It was nice to know that while I was eating a cookie I was also getting some protein and fiber! (warning: the food in this book still has a "healthy" taste to it, it is not like eating regular fatty foods) But if you are looking for a way to make your 2008 healthier I would totally recommend buying it!Tuesday, January 15, 2008

Christmas Day
to start
day was great! We had a lovely day of eating lots of great food (especially Grandma Jill's bran muffins and Grandma Kathy's cinnamon rolls) and spending time with family again. Jack was a lot of fun, he got overwhelmed and fell asleep for most of it but when he was awake he loved it! We just brought home the maximum we could take on the plane (300 lbs), and we still have more to ship home to us so you can definetely tell that we got so spoiled! It was so much more fun to have our own kid to enjoy it with this year!
